Carlos Barneda’s new bet in Montblanc

Carlos Barneda was born in L’Espluga de Francoli, he studied at the School of Hospitality and Tourism in Cambrils and the Hotel and Catering School in Barcelona. He went through the kitchens of Hostal del Senglar, Les Templiers (France), La Gran Tortue (France), Neichel, El Bulli, Can Bosch, Rovira Pastry, Hotel Ciutat de Tarragona, Art Restaurant and Sant Francesc Restaurant.
Named “Chef of the Year” by the prestigious Gourmand Guide in 2003 and finalist in the Chef of the year in representation of Tarragona in the Jeunes Restaurateurs of Europe. Gastromia 2013 prize.
Since 2015, this chef at the Conca de Barbera, has been taken over, by municipal concession, of the San Francesc Restaurant in Montblanc, part of the architectural ensemble of the church with the same name, and now without religious function.
In this unique setting, with the light through large windows, overlooking the historic wall, Carles Barneda offers its proven and contemporary cuisine, with menus at fixed prices. The room with a capacity for 50 diners is directed by Josep Rovira who also serves as sommelier of a cellar with more than 60 references.
Among the culinary specialties we can highlight:
Mashed cabbage and potato of Prades with truffle; warm mushroom salad and cava oil; cuttlefish risotto, artichoke and marine plankton; lamb shoulder at low temperature; coal grilled cod loin with quince; civet of wild boar with raspberries and chocolate; baked sea bass with Conca saffron; Trepat honeyed calf; Catalan cream with carquiñolis; apple and pumpkin tatin; chocolate coulant and violets.
